The Dough
500 g( 4.2Cup) all purpose flour
100 g wisman
200 g meadow lea margarine
2 egg yolks
Pineapple paste( refer recipe)
(Or store bought)
Egg wash
2 egg yolks
2 tbsp cooking oil
> Add in cooking oil to the egg yolks and stir
Preheat Oven at temperature 165C
Grease the baking plates/ tray with oil.
Machine blend butter & egg yolk until the colour turns pale yellow/white
Sift flour slowly into the butter mix
Hand mix all ingredients till well blended
Pinch out a small portion of dough, flatten it & put a pineapple ball in the centre. Wrap around till it becomes a ball
Repeat till the dough is all used up.
Put the trays in the oven with bottom heat for 20min.
1. Tray 1 at bottom for 10min
2. Change with tray 2 to bottom for 10 min
Take them out
Egg wash the pineapple balls for 2x.
Put back to the oven on the 2nd rack from the 1st rack from the top.
Bake with upper heat for another 15mins.
Take out of the oven when the top of the balls turns golden.
Note:
Take out the baking tray after time is up at 20min.
Do not put in the oven longer than recommended time else the pineapple balls would harden
